Pecan Pie
One 9"
Unbaked Pie Shell
1 Tbsp Plain flour
1/8 tsp. Salt
½ cup Sugar
1 cup clear Corn Syrup
3
eggs
¼ cup Melted Butter 1 cup Pecans (Pieces or Halves)
Preheat
oven to 350 degrees. Beat eggs and salt, mix in flour and
sugar. Gradually add syrup, beat well. Add melted butter and
pecans, then pour all into pie shell. Bake 50 minutes. Pie
is done when top splits.
Southern
Bourbon Pecan Pie
Ingredients for Southern Pecan Pie (above) plus:
2 Tbsp bourbon
2 tps vanilla extract
1 Tbsp arrowroot
Following
instructions for Southern Pecan Pie above stir in above ingredients
into melted butter, then add pecans. Continue with instructions
above. So good!
Toasted
Pecans
½ cup
Butter, or Margarine
4 cups Pecan Halves
In skillet, melt butter. Add pecans
and cook just until warm and coated with butter. Then spread
out on large cookie sheet and bake 15 minutes in oven at 300
degrees. Spread out on paper towels and salt to taste.
Pecan
Tarts
2 sticks
butter or margarine
6
oz. cream cheese
2 cups plain flour
Beat together butter, cream cheese until smooth; add flour
slowly, then chill.
While the mixture is chilling, prepare the filling:
1/8 tsp salt
1/2 tsp vanilla flavoring
1 box brown sugar
4 Tbsp melted butter
1 cup chopped pecans

Mix ingredients in order. Do not beat.
Roll dough into small balls (48 - 55). Place each ball into
ungreased 1-3/4" muffin pan. Press dough evenly against bottom
and sides of pan (caps of pan). Fill with filling almost to
top and bake at 375 degrees for 20 - 23 minutes. Cool for
3 - 5 minutes, then remove from pan.

Sweet Potatoes
2
cans sweet potatoes
1/4 cup maple syrup
2 Tbsp butter
2 Tbsp orange juice
1/2 tsp. salt
1/4 cup toasted chopped pecans
In large saucepan, heat potatoes until
warmed through. Remove potatoes from heat. Using an electric
hand mixer, beat potatoes until light and fluffy. Stir in
maple syrup, butter, orange juice, and salt. Transfer to a
serving dish. Sprinkle with toasted
pecans.
Cane
River Coffee Cake
Preheat
oven to 350° and grease 9"x13" pan.
Mix
together 3
cups of apples (peeled and sliced with 2 tsps of cinnamon)
and set aside.
Beat
together the following ingredients for about 3 minutes:
3 cups
flour
3 tsps baking powder
1 tsp salt
1 cup sugar
1 1/2 cup milk
1/2 cup butter, or margarine
3 eggs
Pour
half of flour mixture into 9"x13" pan, top with half of the
apple mixture and repeat. Mix 1/4 cup pecans and 1/4 cup brown
sugar together, sprinkle over the top. Melt 2 tbsps of butter
and drizzle over. Bake for 55 minutes; cool for 12 minutes.
Mix
the following until a smooth consistency::
3/4 cup powdered sugar
1 Tbsp softened butter
3/4 tsp vanilla
3 tsps hot water
Drizzle the glaze over the cake.
